These peels will be ideal to serve to your guests for the holidays, accompanying it with a soft mousse or slice of cake; you can also present them in a pretty
transparent jar or on an elegant tray: they will be snapped up very quickly!

300 grams of orange peel cut into strips from organic oranges
300 grams of sugar
Water as required
Soak the peels (cut and washed in plenty of running water) for at least 4 days (up to 6 days if the peels are thick and hard). It is advisable to leave them to macerate in a cool environment. Should any mold still form, just change the water periodically.
At the end of this preparation, wash and drain the peel.
Weigh an equal amount of sugar and water. Put everything in a saucepan and cook over moderate heat for at least 15-20 minutes or until the water is completely consumed.
With a spoon, place the still hot peel on a sheet of baking paper, spacing them apart. After they have dried (at least 48 hours have passed) they can be stored for a long time in an airtight glass container. An excellent combination of these peels is the dark chocolate coating, which is obtained by soaking them in melted chocolate in a bain-marie or briefly in the microwave oven and then letting them cool. spaced on a sheet of baking paper.
